Shredded Beef Tacos



Yes. . . that's the answer to the question that is going through your mind right now, "do those tacos taste as good as they look?"  And the answer is '"Yes!"  You want to know what's even better about these tacos than how good they look?  They are SOOOOO simple to make.  Throw a few things in the crockpot and in 4-6 hours you have delicious shredded beef for these amazing tacos.


Shredded Beef Tacos

Ingredients
Beef
1 envelope taco seasonings
2 lb beef roast
1 1/2 cups salsa
salt and pepper to taste
Taco Garnishments
corn tortillas (prepare the way you like them, I like mine slightly fried)
shredded cheese
salsa
guacamole
sour cream
cilantro

Directions
1.  First you need to brown your roast.  Place a tiny bit of olive oil in a large skillet and allow to heat up.  Sprinkle salt and pepper on all sides of roast.  Place roast in skillet and brown on all sides, about 1-2 minutes per side.
2.  Place roast in crockpot; sprinkle with taco seasonings and cover with salsa.  Cover and allow to cook 6-7 hours on low or 3-4 hours on high.  Cooking times vary depending on brand and model of crockpot.
3.  30 minutes before you are ready to eat take the roast out of the crockpot and shredded on a cutting board.  Place shredded roast back in crockpot with all the juices and allow to cook for another 30 minutes.  The meat will absorb all the juices and become very tender.  Serve with garnishments of your choice.


When I made these tacos there was only three of us home to eat dinner.  I had a lot leftover so I divided the shredded beef into two different ziploc freezer bags and placed them in my freezer for another night.  I plan on making shredded beef enchiladas with one portion and I'm still trying to figure out what I'll do with the other bag.  If you are like me and L-O-V-E to have pre-made dinners in the freezer than buy a 3 or 4 pound roast and double this recipe!
