Cinnamon French Toast Crunch



Happy Valentine's Day everyone!  What do you make for Valentine's day when your hubby is working in a different state, it's a school day so your 13 year old son isn't there, and the only other person in the house that is going to eat is a 3 year old little boy who normally doesn't really eat much breakfast?  My answer?  French toast, in the shape of hearts of course!  It's hard to tell in that picture but those pieces are shaped as hearts.  Luckily they were a hit with the 3 year old, and even my 9 month old liked them.


Cinnamon French Toast Crunch
















Ingredients
8 slices bread
cooking spray

4 eggs
1/2 cup milk (or heavy cream)
1/2 teaspoon granulated sugar
1/2 teaspoon ground cinnamon

3 handfuls corn flakes, crunched (I put mine in my small food processor)
1 teaspoon ground cinnamon
2 tablespoons brown sugar

Directions
1. Preheat a griddle or large skillet.  In a shallow dish whisk eggs, milk, granulated sugar and 1/2 teaspoon ground cinnamon.  In another shallow dish combine corn flakes, 1 teaspoon cinnamon, and brown sugar.
2. Spray griddle with cooking spray.  Dip a slice of bread into egg mixture, allow bread to soak up egg mixture for a few seconds and then cover slice of bread in the corn flake mixture.  Cook bread about 3-4 minutes per side.
3. Serve french toast with butter and dusted with powder sugar, or however you prefer it! ;)
