It's called a whoopie pie but it more like a stuffed cookie, I'm "filing" it under cookies, I hope everyone is ok with that! My father-in-law had minor surgery a couple of days ago and my 3 year old son wanted to take him a treat so he would feel better. I had never made whoopie pies before and thought this would be the perfect chance to try them out. While we were at the store shopping for ingredients my son saw a box of cake mix for Valentine's Day and "had to have it." Usually I bake everything from scratch but I know that some people are often in a hurry, don't want to bake from scratch or have a ton of cake mixes in their pantry that they want to use up. Here is the perfect solution to all of those! And if you buy pre-made frosting it's even simpler.
