Orange Walnut Coffee Cake


I love the taste of orange in my sweet foods.  I love the tang and zest it gives to the sweetness of foods. I knew I would love this coffee cake from the moment I saw the recipe.  It's a great way to use up oranges that may be going bad soon.  This particular recipe is so easy and quick that there is no reasonable excuse to not make it on any weekday morning.


Orange Walnut Coffee Cake

Ingredients
Cakes:
2 tablespoons butter, melted plus more for pan
1 (16.3 ounce) can refrigerated biscuits
1/4 cup finely diced walnuts
1/3 cup sugar
zest from 2 oranges

Glaze:
1/2 cup powdered sugar
2 ounces cream cheese, softened
2 tablespoons orange juice

Directions
1. Preheat oven to 350 degrees.  Grease a 9" round cake pan.
2. Separate the biscuit dough into 8 biscuits.  Cut biscuits in half (creating a top and bottom).  Place bottoms of all 8 biscuits into cake pan.  Brush melted butter over bottoms of biscuits.
3. In a small bowl, combine the walnuts, sugar and orange zest.  Mix well and sprinkle over bottom biscuits.  Place tops of biscuits onto of walnut mixture (like a sandwich).
4. Bake for 20 minutes or until golden brown.
5. Meanwhile, in a small bowl combine powdered sugar, cream cheese and orange juice.  Blend until smooth adding more orange juice if needed.  Drizzle glaze over the warm coffee cake and serve.
