I know. . . strange right? Cauliflower apple soup? But it was so good! A must try, and I'm not even a big cauliflower fan. I received two heads of cauliflower in my Bountiful Basket and didn't know what to do with them. I honestly do NOT like cauliflower raw, and I've tried the mock mashed potatoes with cauliflower and didn't like those either. So what's a girl to do? Well, after scouring the internet for something that sounded good and had cauliflower in the ingredients I finally found a soup that seemed simple enough. I think this recipe would taste just as good with pears in place of the apples, in fact it might taste really good with pears AND apples!

Almond Cinnamon Biscotti
Every time my mom comes to visit she brings her own morning goodies. These goodies consist of her own coffee, coffee creamer and biscotti cookies. On her last visit Asher, my 3 year old, "shared" her biscotti cookies and I was afraid she would run out before her visit was over. So. . . I figured it was time to make some. These turned out a lot better than I thought they would. When I got to the step where you shape them into a log I wasn't exactly sure I was doing it correctly. Thankfully they turned out! I love this recipe because you could easily add ingredients or switch others. Switch the nut, add cranberries, switch from cinnamon to nutmeg or cardamon! Let me know if you switch it up a bit, I'd love to know how others put their own twist to this recipe.

Apple Pancakes
Pancakes were never a big favorite in our house until recently. Now that I have an infant in the house who loves to feed himself, pancakes seem to be popping up more and more. Every time I make pancakes I make a large batch and freeze the extras. When my little man wants something for breakfast or a quick snack, and I have no idea what to give him, I pull out one of the pancakes, pop it in the toaster and VOILA! instant, tasty food.
The recipe I adapted this from calls for all purpose flour, however, after much research on the internet I found that to get big fluffy pancakes you should substitute the flour with self-rising flour, so I gave it a try in this recipe. I thought they turned out pretty darn fluffy!
Yikes!
So, I've finally started to get back into the swing of making new recipes and taking pictures. I'm a little sad that my new kitchen it so much smaller than the one I had before. I never knew how much I used my kitchen island until I didn't have one anymore!
As I was getting ready to start uploading some new pictures I realized that I have 4 or 5 different recipes that I'd made prior to moving that I have yet to post! YIKES! I hope I remember the ingredient measurements because I never write anything down!

Life in Rock Springs, WY
We are finally here, we have been here for two weeks now and we are still trying to get settled in. Luckily it didn't take us too long to find a home to rent. We got here on Thursday March 22, looked at a house on Friday and we were told we could move in on Monday. I still have boxes every where. The house in Rock Springs is about half the size of our home in Enoch, Utah so I am having a very difficult time trying to find places for everything to go.
My goal is to start back up with this blog next week. . . keep your fingers crossed that I'm able to do that!

Temporary Break
You may have noticed that I haven't posted a recipe in a while. As I mentioned on my About Me page, we are in the process of moving to Wyoming. Our house closes on Monday and we will be out by Tuesday so it has been really crazy around here the last few weeks trying to get everything packed and ready for the move. I will be back and going once we are settled in Rock Springs, but I honestly don't know when that will be. We are in a bit of a housing crisis right now, as in, there are too many people and not enough houses to rent in the area. I'm praying we find something very soon!

Shredded Beef Tacos
Yes. . . that's the answer to the question that is going through your mind right now, "do those tacos taste as good as they look?" And the answer is '"Yes!" You want to know what's even better about these tacos than how good they look? They are SOOOOO simple to make. Throw a few things in the crockpot and in 4-6 hours you have delicious shredded beef for these amazing tacos.
