Fall Harvest Steel Cut Oats

I know it's not fall, it's the middle of winter!  But this would be tasty anytime of year.  It doesn't take long to prepare, especially if you are like me and prepare oats Sunday night for the whole week.

Fall Harvest Steel Cut Oats

1 serving steel cut oats/oatmeal
1 teaspoon coconut oil
1 medium apple, diced
1 medium pear, diced
1 tablespoon raw sugar
1 teaspoon ground cinnamon
1/4 cup slivered almonds

1.  Cook oats as directed.
2. Meanwhile, in a small skillet over medium heat melt coconut oil.  Add diced fruit and cook until softened, approximately 3-4 minutes.  Once soft, add sugar, cinnamon and almonds.  Cook until sugar is melted.
3.  Top oats with fruit mixture.
